Cattle Baron Restaurants Celebrate 50 Years in New Mexico

Since 1976, Cattle Baron Restaurants has served the residents of Roswell and surrounding communities, providing quality steak dinners, a massive salad bar, and service that makes diners feel special. The restaurant chain is hosting several events to mark its 50th Anniversary and give back to the communities that have supported it over the years.
“A restaurant staying in business for 50 years is phenomenal, it’s just not heard of,” says Bryan Steele, COO of Cattle Baron Restaurants. “This has been a family-operated business since it opened.”

Cattle Baron Started With a Single Restaurant Purchase
Cattle Baron was founded in 1976, shortly after Jeff Wilson purchased his first restaurant in Portales, New Mexico. The name of the restaurant was Bob’s, but Wilson quickly grew tired of people coming in asking for Bob.
After the restaurant was rebranded to Cattle Baron, Wilson began expanding its footprint. He opened locations in Hobbs, Roswell, Las Cruces, and other communities across the Southwest. From there, Wilson branched out into other cuisines, debuting the Farley’s and Paste Café brands.
“Jeff’s focus was always on the location of the restaurant,” says Steele. “He was looking at places outside of major metropolitan areas to meet the needs of local communities.”
Wilson was Steele’s brother-in-law, and his sister Melanie (Steele’s wife) took over the restaurant business when he passed away. Melanie passed away in July 2025, and the business is now run by Wilson’s brother, Clay, with Steele assisting as COO. The company has remained in the family.
“Jeff was a remarkable guy; he had a commanding presence, was very smart, and was all business all the time,” says Steele. “When he passed, Melanie took over and did a fantastic job elevating the business and making the company profitable.”
Today, Cattle Baron continues to sell Iowa Premium® steaks and prepare its food in-house. The restaurant chain survived the COVID pandemic and continues to put customers first with good food and great experiences.
Good Food Comes From Happy People
Steele credits the employees at Cattle Baron as the key to the company’s success. Several general managers have been with the business for a long time, and a few employees have celebrated 40 years with their restaurants. Steele has even talked to employees who say working at Cattle Baron has helped them put their kids through school and reach other life milestones.
Happy employees lead to better customer experiences. When a team member is happy at their job, they are more likely to bring that energy to the customers they meet with. Positive experiences bring customers back, keeping Cattle Baron in business.
“When guests come in, we want them to have a memorable time,” says Steele. “How people are greeted, the attitude of waitstaff, and how customers are treated all have an immediate effect on the diners.”
Steele emphasizes that people like being noticed and even remembered. Knowing someone’s name and telling them you are glad they are back can go a long way.
Cattle Baron is Actively Involved in the Roswell Community
Residents of Chaves County will notice Cattle Baron is a sponsor of local baseball teams and a member of the Roswell Chamber of Commerce. Throughout his life, Wilson supported Assurance Home, which provides a safe place to live and resources for adolescent children who would otherwise be homeless.
“We try to support the Roswell community,” says Steele. “We know other businesses in the area and get along with them. We all help each other when we can.”
Not only does Cattle Baron provide a comforting place for residents to eat, but it also invests in Chaves County and wants to see it grow.

Cattle Baron Has Big Events Planned for Its Anniversary
Each Cattle Baron location has events planned to celebrate this year and give back to customers who have been so loyal throughout the decades. There will be ribbon-cuttings, festivals, red-carpet vibes, giveaways, and plenty of food tastings. The Farley’s location in Roswell is also hosting a Tequila festival in May, pairing food with different liquors.
